What Is Chebakia?

Chebakia (also chebbakia or mkharka) is a fried pastry found throughout Morocco and Algeria. Its pretzel-like flower shape represents a honeycomb. It is traditionally prepared in big batches before Ramadan and enjoyed alongside harira soup at sunset.

Ingredients

  • 500 g (4 cups) all-purpose flour
  • 100 g (3/4 cup) toasted sesame seeds, ground, plus extra for coating
  • 1 tbsp ground anise
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1 tsp ground ginger
  • Pinch of saffron, dissolved in 2 tbsp warm water
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 packet (7 g) dry yeast
  • 2 tbsp white vinegar
  • 3 tbsp orange blossom water
  • 100 g melted butter
  • 1 egg
  • About 150 ml warm water
  • For frying: neutral oil
  • Honey bath: 500 g (1.5 cups) honey, 2 tbsp orange blossom water

Making and Shaping the Dough Flowers

Mix the dry ingredients and spices. Add the egg, butter, vinegar, saffron water and orange blossom water, then add warm water gradually, kneading to form a smooth, soft, slightly sticky dough. Knead 10 minutes, cover and rest 30 minutes.

Roll the dough to 2-3 mm thick and cut into rectangles of about 8x10 cm. Cut 4 parallel slits inside each rectangle, leaving the edges intact. Weave the first and last strips, then fold the ends toward the center, forming a rose. Pinch to seal. Place on a floured tray and rest 20 minutes.

Frying to Golden Brown

Heat 5 cm of oil to 170°C (340°F). Fry in small batches without crowding, 2-3 minutes per side, until deep golden brown. Drain briefly on paper towels. The oil must not be too hot or the centers stay raw, and not too cool or the cookies absorb oil.

Coating with Warm Honey and Sesame

Warm the honey with orange blossom water over low heat until fluid but not boiling. Dip the still-warm chebakia for about 30 seconds, turning once, then lift and let the excess drip. Place on a rack and sprinkle generously with toasted sesame seeds. Let them dry for an hour so the honey sets.

Storage Tips

Store in an airtight tin at room temperature for up to 3 weeks. Layer with parchment paper. Do not refrigerate, as the honey will crystallize and the cookies soften.

Serving During Ramadan

Serve at iftar with harira soup, dates, and mint tea or milk. The sweetness is balanced by the savory soup, a classic Moroccan combination. They also make great gifts for Eid.

Frequently Asked Questions

Can I bake chebakia?

Baking gives a very different texture. Traditional chebakia is fried for crispness.

Why are my cookies not crispy?

They may have absorbed too much honey, or oil temperature was too low. Dip briefly.

Can I make the dough ahead?

Yes. Refrigerate overnight and bring to room temperature before shaping.

What if I can't find anise?

Substitute with a pinch of fennel seed, or omit.

Are they gluten-free?

Not with this recipe. Gluten-free flour blends do not hold the delicate shape well.
